Cranberry Apple Gluten-Free Upside Down Cake

Ingredients

Topping

  • 1 tbsp butter, melted
  • 1 tbsp maple syrup
  • 1 - 1 1/2 cups frozen or fresh cranberries
  • 2 apples, peeled and diced (e.g., Granny Smith)
  • 1/4 cup sugar

Cake

  • 1 1/2 cups GF 1-1 flour
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 2 tsp cinnamon
  • 2/3 cup sugar
  • 2/3 cup unsweetened apple sauce
  • 8 tbsp butter, melted
  • 2 eggs
  • 1 tsp vanilla

Preparation

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round pan.

  2. For the topping: Drizzle the melted butter and maple syrup in the bottom of the pan. Mix in the cranberries and diced apples. Drizzle with sugar and add a dash of cinnamon if desired.

  3. For the cake: In a mixing bowl, stir together the GF flour, salt, baking powder, and cinnamon until well combined.

  4. In another bowl, whisk together the sugar, unsweetened apple sauce, melted butter, eggs, and vanilla until smooth.

  5. Combine the wet and dry ingredients, stirring until you have a smooth batter.

  6. Pour the cake batter evenly over the topping mixture in the pan.

  7. Bake for 35-40 minutes or until the center of the cake feels firm and a cake tester comes out clean.

  8. Once baked, invert the cake onto a serving plate while it's still warm.

  9. Serve warm, optionally adding whipped cream or drizzled caramel and heated apple slices for extra flavor.
