Quick and Easy Chocolate Zucchini Brownies 🍫πŸ₯’

Ingredients

  • 120g melting chocolate (suitable for melting)
  • 200g grated zucchini
  • 20g cocoa powder
  • 30g stevia
  • 30g cornstarch (maizena)
  • 4 eggs
  • 1 tbsp coconut oil
  • 1 tsp vanilla essence

Preparation

  1. Melt the chocolate in the microwave or using a double boiler with a touch of coconut oil/butter. Set aside in a bowl.

  2. Separate the egg whites from the yolks and beat the egg whites until stiff peaks form. Transfer the egg whites to a separate bowl.

  3. In another bowl, whisk together the cocoa powder and cornstarch. Add the egg yolks, grated zucchini, and melted chocolate.

  4. Gently fold in the beaten egg whites until the mixture is fully incorporated.

  5. Pour the mixture into a medium rectangular baking dish (lined with parchment paper) and bake at 180Β°C (350Β°F) for 30 minutes.

  6. Allow the brownies to cool before enjoying.
