Vegan Pinwheel Treats with Cardamom and Chocolate

Ingredients

  • 1 cup almond flour
  • 1 cup coconut milk powder
  • 1/2 cup icing sugar
  • 1/2 tsp cardamom powder
  • 1/4 cup soy milk
  • 2 tbsp cacao powder
  • 2 tbsp coconut oil

Preparation

  1. In a bowl, combine almond flour, coconut milk powder, icing sugar, cardamom powder, and coconut oil. Crumble the mixture together.

  2. Add soy milk to the mixture and knead it into a dough.

  3. If you want a larger roll, repeat the same quantity of ingredients with chocolate. Otherwise, the given ingredients will make 12 pieces. Divide the dough into two separate balls and add cacao powder to one of the balls.

  4. Once the dough is prepared, flatten it using a rolling pin on a baking sheet. Layer the chocolate-flavored dough on top of the white dough.

  5. Roll the dough tightly with the help of baking paper, making it as big as you desire. Place the rolled dough in the fridge for 15 to 20 minutes.

  6. After chilling, cut the roll into pieces and serve. You can store the pinwheel treats in an airtight container in the fridge for weeks.
