Avocado Garlicky Mushroom Toast

Ingredients

Mushroom topping

  • About 250-300g chestnut mushrooms
  • 1 clove garlic, crushed
  • 1 tablespoon olive oil
  • A generous splash of tamari sauce
  • 2 tablespoons fresh thyme leaves
  • A sprinkle of black pepper

Avocado spread

  • 1 ripe avocado
  • Juice of 1/2 lemon
  • A pinch of sea salt or pink Himalayan salt

Bread

  • 2 slices bread of your choice, preferably crunchy sourdough

Preparation

  1. Wash and slice the mushrooms.

  2. Heat the olive oil in a frying pan.

  3. Add the crushed garlic and cook for 1 minute, stirring occasionally to prevent burning.

  4. Add the sliced mushrooms and tamari sauce, and cook for 8-10 minutes until the liquid has evaporated.

  5. Stir in the fresh thyme and black pepper.

  6. Mash the avocado with a fork, then add the lemon juice and salt.

  7. Toast the bread.

  8. Spread a thick layer of avocado on the toast.

  9. Top with the mushrooms.
