Avocado Garlicky Mushroom Toast
Ingredients
Mushroom topping
- About 250-300g chestnut mushrooms
- 1 clove garlic, crushed
- 1 tablespoon olive oil
- A generous splash of tamari sauce
- 2 tablespoons fresh thyme leaves
- A sprinkle of black pepper
Avocado spread
- 1 ripe avocado
- Juice of 1/2 lemon
- A pinch of sea salt or pink Himalayan salt
Bread
- 2 slices bread of your choice, preferably crunchy sourdough
Preparation
Wash and slice the mushrooms.
Heat the olive oil in a frying pan.
Add the crushed garlic and cook for 1 minute, stirring occasionally to prevent burning.
Add the sliced mushrooms and tamari sauce, and cook for 8-10 minutes until the liquid has evaporated.
Stir in the fresh thyme and black pepper.
Mash the avocado with a fork, then add the lemon juice and salt.
Toast the bread.
Spread a thick layer of avocado on the toast.
Top with the mushrooms.
