Quick Avocado Toast with Garlicky Mushrooms
Ingredients
Mushroom topping
- 250-300g chestnut mushrooms
- 1 clove crushed garlic
- 1 tablespoon olive oil
- a generous splash of tamari sauce
- 2 tablespoons fresh thyme leaves
- a sprinkle of black pepper
Avocado spread
- 1 ripe avocado
- juice of 1/2 lemon
- a pinch of sea salt or pink Himalayan salt
Bread
- 2 slices bread of your choice
Preparation
Wash and slice the mushrooms
Heat the olive oil in a frying pan
Add the crushed garlic and cook for 1 minute, stirring occasionally to prevent burning
Add the sliced mushrooms and tamari sauce, then cook for 8-10 minutes until the mushroom liquid has evaporated
Stir in the fresh thyme and black pepper
Mash the avocado with a fork
Add the lemon juice and salt to the avocado
Toast the bread
Spread a thick layer of avocado on the toast
Top with the cooked mushrooms

Crunchy sourdough bread is recommended for the best texture
