Quick Avocado Toast with Garlicky Mushrooms

Ingredients

Mushroom topping

  • 250-300g chestnut mushrooms
  • 1 clove crushed garlic
  • 1 tablespoon olive oil
  • a generous splash of tamari sauce
  • 2 tablespoons fresh thyme leaves
  • a sprinkle of black pepper

Avocado spread

  • 1 ripe avocado
  • juice of 1/2 lemon
  • a pinch of sea salt or pink Himalayan salt

Bread

  • 2 slices bread of your choice

Preparation

  1. Wash and slice the mushrooms

  2. Heat the olive oil in a frying pan

  3. Add the crushed garlic and cook for 1 minute, stirring occasionally to prevent burning

  4. Add the sliced mushrooms and tamari sauce, then cook for 8-10 minutes until the mushroom liquid has evaporated

  5. Stir in the fresh thyme and black pepper

  6. Mash the avocado with a fork

  7. Add the lemon juice and salt to the avocado

  8. Toast the bread

  9. Spread a thick layer of avocado on the toast

  10. Top with the cooked mushrooms

  1. Crunchy sourdough bread is recommended for the best texture
