Banana Zucchini Oat Bowl

Ingredients

  • 250 ml almond milk
  • 1/2 banana
  • 1/2 zucchini (grated)
  • 2 tablespoons cauliflower rice
  • 3 tablespoons oats
  • 2 teaspoons hemp seeds

Toppings

  • 1/2 baked banana
  • peanut butter
  • some cinnamon
  • quinoa puffs
  • cacao nibs

Preparation

  1. Grate the 1/2 zucchini

  2. In a saucepan, combine 250 ml almond milk, grated zucchini, 1/2 banana, 2 tablespoons cauliflower rice, 3 tablespoons oats, and 2 teaspoons hemp seeds. Cook over medium heat until oats are soft and mixture thickens, about 5-10 minutes

  3. Bake the other 1/2 banana in an oven preheated to 180°C for 10-15 minutes until caramelized

  4. Assemble by placing the cooked oat mixture in a bowl and topping with the baked banana, peanut butter, cinnamon, quinoa puffs, and cacao nibs
