Banana Zucchini Oat Bowl
Ingredients
- 250 ml almond milk
- 1/2 banana
- 1/2 zucchini (grated)
- 2 tablespoons cauliflower rice
- 3 tablespoons oats
- 2 teaspoons hemp seeds
Toppings
- 1/2 baked banana
- peanut butter
- some cinnamon
- quinoa puffs
- cacao nibs
Preparation
Grate the 1/2 zucchini
In a saucepan, combine 250 ml almond milk, grated zucchini, 1/2 banana, 2 tablespoons cauliflower rice, 3 tablespoons oats, and 2 teaspoons hemp seeds. Cook over medium heat until oats are soft and mixture thickens, about 5-10 minutes
Bake the other 1/2 banana in an oven preheated to 180°C for 10-15 minutes until caramelized
Assemble by placing the cooked oat mixture in a bowl and topping with the baked banana, peanut butter, cinnamon, quinoa puffs, and cacao nibs
