Creamy Vanilla Oatmeal with Miso Caramel Topping

Ingredients

  • jumbo oats
  • vanilla bean
  • almond milk
  • a spoonful of soy yogurt
  • dark chocolate
  • toasted sesame
  • banana
  • pumpkin seeds
  • blueberries

Miso caramel mix

  • 1/2 tablespoon red miso paste
  • 1 tablespoon maple syrup
  • 1/2 teaspoon mirin (optional)
  • big scoop of runny peanut butter

Preparation

  1. Soak the porridge and jumbo oats.

  2. Cook the soaked oats with vanilla bean and almond milk.

  3. Stir in a spoonful of soy yogurt at the end to emulsify and create a creamy texture.

  4. Top with miso caramel peanut butter, melting dark chocolate, toasted sesame, banana, pumpkin seeds, and blueberries for a comforting finish.
