Creamy Vanilla Oatmeal with Miso Caramel Topping
Ingredients
- jumbo oats
- vanilla bean
- almond milk
- a spoonful of soy yogurt
- dark chocolate
- toasted sesame
- banana
- pumpkin seeds
- blueberries
Miso caramel mix
- 1/2 tablespoon red miso paste
- 1 tablespoon maple syrup
- 1/2 teaspoon mirin (optional)
- big scoop of runny peanut butter
Preparation
Soak the porridge and jumbo oats.
Cook the soaked oats with vanilla bean and almond milk.
Stir in a spoonful of soy yogurt at the end to emulsify and create a creamy texture.
Top with miso caramel peanut butter, melting dark chocolate, toasted sesame, banana, pumpkin seeds, and blueberries for a comforting finish.
The mixture becomes milky, custardy, and rich with sweet-salty flavors from the miso caramel.

Mix 1/2 tablespoon of red miso paste with 1 tablespoon of maple syrup.
Add 1/2 teaspoon of mirin if using for extra flavor.
