Rice Pudding in Under 10 Minutes

Ingredients

  • 2 cups cooked jasmine rice
  • 1 Tbl chia seeds
  • 1 cup @theoatyeah unsweetened
  • 2 Tbl maple syrup
  • 1/4 cup raisins
  • 1 tsp cinnamon (or more)
  • Pinch salt

Preparation

  1. Mix together all ingredients except rice.

  2. Bring to a simmer.

  3. Turn off heat and add cooked rice.

  4. Stir and let sit for a minute covered.

  5. Serve.

Tips

  1. Use jasmine rice for better fragrance and lower glycemic index.

  2. Prepare rice ahead by doubling the amount when cooking and refrigerating half; it improves texture by evaporating excess moisture.
