Rice Pudding in Under 10 Minutes
Ingredients
- 2 cups cooked jasmine rice
- 1 Tbl chia seeds
- 1 cup @theoatyeah unsweetened
- 2 Tbl maple syrup
- 1/4 cup raisins
- 1 tsp cinnamon (or more)
- Pinch salt
Preparation
Mix together all ingredients except rice.
Bring to a simmer.
Turn off heat and add cooked rice.
Stir and let sit for a minute covered.
Serve.
Tips
Use jasmine rice for better fragrance and lower glycemic index.
Prepare rice ahead by doubling the amount when cooking and refrigerating half; it improves texture by evaporating excess moisture.
