Vegan Strawberry Cheesecake Overnight Oats
Ingredients
- 1 cup rolled oats
- 1 cup strawberries, diced
- 1 tablespoon chia seeds
- Pinch of salt
- 3/4 cup plant milk, unsweetened (preferably almond)
- 1/2 cup coconut yogurt
- 1 tablespoon agave or 1 mashed ripe banana
- 1 teaspoon vanilla extract or 1/2 scoop vegan vanilla protein powder
Preparation
Add oats and chia seeds to a bowl or jar.
Add almond milk and mashed banana, then mix well.
Add a pinch of salt and coconut yogurt, and continue to mix.
Add vanilla extract or vegan vanilla protein powder and mix again.
Refrigerate for 15 minutes or overnight.
Top with fresh diced strawberries, pumpkin seeds, bee pollen, and cashew butter before serving.
