Vegan Strawberry Cheesecake Overnight Oats

Ingredients

  • 1 cup rolled oats⁠⠀
  • 1 cup strawberries, diced⁠⠀
  • 1 tablespoon chia speeds⁠⠀
  • pinch of salt (essential for flavour!)⁠⠀
  • 3/4 cup plant (preferably almond) milk, unsweetened⁠⠀
  • 1/2 cup coconut yogurt⁠⠀
  • 1 tablespoon agave or 1 mashed ripe banana ⁠⠀
  • 1 teaspoon vanilla extract OR 1/2 scoop of vegan vanilla protein powder if you want that extra boost of protein too!⁠⠀

Preparation

  1. Add your oats and chia seeds into a bowl or jar (if you’re planning to take it on the go), and then add in your almond milk and mashed banana

  2. Give this all a good mix! Add in the pinch of salt and your coconut yogurt and continue to mix, and then finally add in your vanilla from either your extract or protein powder and give it all one last mix

  3. Leave this in the fridge for 15 minutes or overnight, and then it’s all yours to devour ? Top this off with fresh diced strawberries, pumpkin seeds, bee pollen, and some cashew butter for the perfect last touches
