Vegan Zoats Breakfast Bowl
Ingredients
- 2/3 cup oats
- 1 1/4 cups water or cashew milk
- 1/2 zucchini, grated
- 2 heaping spoonfuls pumpkin purée
- 1/2 scoop vegan pumpkin spice latte protein powder
- 1 scoop mental mushrooms
Toppings
- strawberries
- unsweetened coconut flakes
- almond butter
Preparation
In a pot, combine all ingredients except toppings and cook over medium heat, stirring occasionally, until thickened and oats are soft, about 5-10 minutes.
Remove from heat and let cool slightly if desired.
Top with strawberries, unsweetened coconut flakes, and almond butter before serving.
