Vegan Zoats Breakfast Bowl

Ingredients

  • 2/3 cup oats
  • 1 1/4 cups water or cashew milk
  • 1/2 zucchini, grated
  • 2 heaping spoonfuls pumpkin purée
  • 1/2 scoop vegan pumpkin spice latte protein powder
  • 1 scoop mental mushrooms

Toppings

  • strawberries
  • unsweetened coconut flakes
  • almond butter

Preparation

  1. In a pot, combine all ingredients except toppings and cook over medium heat, stirring occasionally, until thickened and oats are soft, about 5-10 minutes.

  2. Remove from heat and let cool slightly if desired.

  3. Top with strawberries, unsweetened coconut flakes, and almond butter before serving.
