Simple Plant-Based Veggie Lunch Bowl
Ingredients
- 1/2 bag organic cabbage blend
- 1 cup roasted beets
- 1/4 avocado
- 2 tablespoons hemp seeds
- flax seeds
- everything seasoning
- 1 slice vegan bread
- hummus
Preparation
Roast or cook veggies in advance such as broccoli, carrots, beets, or sweet potatoes
Choose 1-2 cups of the prepared veggies and combine with 2 cups of greens like spinach, romaine, kale, or cabbage
Sprinkle 2 tablespoons of hemp seeds for protein
Add optional sunflower seeds, flax seeds, avocado, and drizzle with olive oil
For crispiness, sauté hemp seeds in a pan before adding
Tip: Limit to 2-3 veggies to aid digestion and keep meal prep simple
