Simple Plant-Based Veggie Lunch Bowl

Ingredients

  • 1/2 bag organic cabbage blend
  • 1 cup roasted beets
  • 1/4 avocado
  • 2 tablespoons hemp seeds
  • flax seeds
  • everything seasoning
  • 1 slice vegan bread
  • hummus

Preparation

  1. Roast or cook veggies in advance such as broccoli, carrots, beets, or sweet potatoes

  2. Choose 1-2 cups of the prepared veggies and combine with 2 cups of greens like spinach, romaine, kale, or cabbage

  3. Sprinkle 2 tablespoons of hemp seeds for protein

  4. Add optional sunflower seeds, flax seeds, avocado, and drizzle with olive oil

  5. For crispiness, sauté hemp seeds in a pan before adding

  6. Tip: Limit to 2-3 veggies to aid digestion and keep meal prep simple
