Three Easy and Nutritious Snacks

Ingredients

Cashew butter

  • 2 cups raw cashews
  • 1 tsp melted coconut oil
  • Pinch of salt
  • 1/2 tsp maple syrup

Maple walnut oatmeal cake

  • 1/2 cup rolled oats
  • 1/4 cup water or non-dairy milk
  • 2 tsp maple syrup
  • 1/2 tsp baking powder
  • Dash of salt and cinnamon

Dairy-free yogurt granola bark

  • 1/3 cup dairy-free yogurt
  • 1 tbsp maple syrup
  • 1/3 cup mixed berries
  • 2 tbsp granola

Preparation

Cashew butter

  1. Roast cashews in a 325F oven for 10 min or until golden brown.

  2. Add to a food processor and process for 10 minutes until creamy, scraping down the sides as needed.

  3. Add coconut oil, salt, and maple syrup and process for a few minutes until desired consistency.

Maple walnut oatmeal cake

  1. Preheat the oven to 350F.

  2. Blend all ingredients together until creamy.

  3. Pour into an oven-proof bowl or small ramekin.

  4. Bake for 10 minutes.

  5. Top with fruit and nut butter.

Dairy-free yogurt granola bark

  1. Line a baking sheet with parchment paper.

  2. Combine yogurt and maple syrup.

  3. Spread yogurt onto the paper in an even layer.

  4. Sprinkle over mixed berries and granola.

  5. Freeze for 10 minutes or until set.

  6. Break into chunks.

  7. Store in an airtight container in the freezer.
