Coconut Overnight Oats

Ingredients

  • 1/2 cup rolled oats
  • 1 tbsp ground flax seed
  • 1 tbsp shredded coconut flakes
  • Pinch of salt
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom
  • 1 banana
  • 1/2 cup unsweetened soy milk

Preparation

  1. Combine all ingredients except for the banana.

  2. Set the mixture in the fridge overnight.

  3. Prior to serving, stir in the mashed banana.

  4. Mix evenly and serve with fruit and granola.
