Delicious Fluffy Berry Muffins
Ingredients
- 250g flour
- 2 teaspoons of baking powder
- 1/2 teaspoon of baking soda
- 1/4 teaspoon of cinnamon
- 30g protein powder
- 1 pinch of salt
- a bit of vanilla flavor
- 250ml plant milk
- 100g date syrup
- 100g unsweetened applesauce
- 100g melted coconut oil
- 350g mixed berries
Optional additions

- sprinkles
Preparation
Preheat the oven to 200°C and line a muffin tin with paper liners.
In a large bowl, mix the flour, baking powder, baking soda, cinnamon, protein powder, and salt.
In another bowl, combine the plant milk, date syrup, applesauce, melted coconut oil, and vanilla flavor.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Gently fold in the mixed berries.
If using, add chocolate and sprinkles to the batter.
Spoon the batter into the prepared muffin tin.
Bake for 15 to 20 minutes or until a toothpick inserted comes out clean.
Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack.
