Goji Berry and Walnut Bliss Balls

Ingredients

  • 1 cup walnut pieces
  • 1/4 cup sundried goji or cranberries
  • 5 medjool dates
  • 1/4 cup sunflower seeds
  • 1 tbsp chia seeds
  • 2 tbsp raw cacao powder
  • 3 tbsp peanut butter

Coating

  • 1 cup desiccated coconut for rolling

Preparation

  1. Place the dates and goji berries in a small bowl and cover with boiling water. Allow to soften for 5 to 10 minutes. Drain well.

  2. Place all the ingredients in a food processor (except the coconut), and pulse until the nuts and seeds are roughly chopped and the mixture starts to come together.

  3. Roll the mixture into small balls using your hands and roll the balls in a bowl of desiccated coconut, ensuring they are entirely covered.

  4. Place the balls in an airtight container in the fridge until you’re ready to eat them.

Tips

  1. Be careful not to over-blend as the nuts or nut butters can start releasing their oils and make the mixture a little too oily.
