Mince Pie Baked Oats
Ingredients
- 60g porridge oats (gluten-free)
- 3 tbsp boiling water
- 2 tbsp any yogurt (soya)
- Handful of sultanas/raisins
- 1/2 tsp mixed spice
- 1/2 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp baking powder (gluten-free)
- Squeeze of lemon juice
- Drizzle of any syrup
Preparation
Preheat oven to 180°C (350°F/gas 4).
Place oats in a bowl with boiling water, lemon juice, and baking powder. Allow to sit for 5 minutes.
Stir in all the other ingredients.
Line a shallow baking dish or small ramekin with baking paper. Any size will work since the mixture is thick. You can use a shallow 8-inch cake tin if needed.
Transfer the mixture to the baking dish and bake for 20 minutes.
