Mince Pie Baked Oats

Ingredients

  • 60g porridge oats (gluten-free)
  • 3 tbsp boiling water
  • 2 tbsp any yogurt (soya)
  • Handful of sultanas/raisins
  • 1/2 tsp mixed spice
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp baking powder (gluten-free)
  • Squeeze of lemon juice
  • Drizzle of any syrup

Preparation

  1. Preheat oven to 180°C (350°F/gas 4).

  2. Place oats in a bowl with boiling water, lemon juice, and baking powder. Allow to sit for 5 minutes.

  3. Stir in all the other ingredients.

  4. Line a shallow baking dish or small ramekin with baking paper. Any size will work since the mixture is thick. You can use a shallow 8-inch cake tin if needed.

  5. Transfer the mixture to the baking dish and bake for 20 minutes.
