Protein-Packed Chocolate Chickpea Clusters

Ingredients

  • 2 cans of chickpeas (15oz or 400ml, in water or cooked from dried beans)
  • 1 cup of chocolate chips (dairy-free, 150g)

Preparation

  1. Pre-heat oven to 350F or 180C.

  2. Drain and rinse the chickpeas then spread flat on an oven pan lined with greaseproof paper.

  3. Bake for about 50-60 minutes, tossing every 15 minutes until bone dry.

  4. Take out of the oven and place in a bowl with the chocolate and stir using the residual heat to melt.

  5. Spoon onto greaseproof paper using a dessert or tablespoon and chill to set.

  6. They will last for several weeks in an airtight container if the chickpeas are dried thoroughly in the oven.
