Scrambled Eggs, Avocado, and Sweet Potato Breakfast
Ingredients
- 2 organic brown eggs
- red pepper flakes
- spinach
- @fourthandheart garlic ghee
- 1 sweet potato
- 1/2 avocado
- EBTB seasoning
Preparation
Bake the sweet potato at 400°F for 45 minutes, then turn off the oven and leave it inside for another 45 minutes to caramelize.
Sauté the spinach in garlic ghee.
Scramble the eggs.
Top the scrambled eggs with red pepper flakes.
Slice the avocado and season it with EBTB seasoning.
Assemble the plate with the sweet potato, which can be eaten cold or heated in the microwave or oven as preferred.
