Creamy Coconut Turmeric Cauliflower N(oats) Bowl

Ingredients

  • 1 tbsp coconut oil
  • 1 cup riced raw cauliflower (frozen works too)
  • 1 flax egg (1 tbsp ground flax + 1/2 tbsp water)
  • 1/2 cup dairy free milk (coconut, almond, macadamia)
  • Cinnamon + cardamom
  • Optional: protein powder (I used @livwell_nutrition )

Toppings

  • POOL of @spreadthelove
  • shredded coconut
  • pumpkin seeds
  • cacao nibs

Preparation

  1. Add coconut oil to saucepan, add cauliflower and toss.

  2. Add cinnamon + cardamom + turmeric + “milk” and simmer for about 5 minutes.

  3. Mix in flax egg and protein (if using) and stir till creamy.

  4. Transfer to a bowl and add toppings!
