Cozy Cauliflower Zucchini Banana Oats

Ingredients

  • 1 tbsp coconut oil
  • 1 cup riced cauliflower (fresh or frozen)
  • 1/3 cup grated zucchini
  • 1/2 cup water
  • 1/4 cup coconut milk
  • 1 tbsp flax meal
  • 1 scoop protein powder of choice
  • 1 banana
  • cinnamon

Toppings

  • syrup
  • honey
  • nut butter
  • coconut
  • seeds

Preparation

  1. In a saucepan, add 1 tbsp coconut oil.

  2. Add 1 cup riced cauliflower and 1/3 cup grated zucchini and toss.

  3. Add 1/2 cup water.

  4. Add 1/4 cup coconut milk for thickness.

  5. Add 1 tbsp flax meal and 1 scoop protein powder of choice.

  6. Reduce to simmer and let thicken.

  7. Meanwhile, sauté banana in coconut oil and cinnamon.

  8. Combine all in a bowl.

  9. Add desired toppings.
