Cozy Cauliflower Zucchini Banana Oats
Ingredients
- 1 tbsp coconut oil
- 1 cup riced cauliflower (fresh or frozen)
- 1/3 cup grated zucchini
- 1/2 cup water
- 1/4 cup coconut milk
- 1 tbsp flax meal
- 1 scoop protein powder of choice
- 1 banana
- cinnamon
Toppings
- syrup
- honey
- nut butter
- coconut
- seeds
Preparation
In a saucepan, add 1 tbsp coconut oil.
Add 1 cup riced cauliflower and 1/3 cup grated zucchini and toss.
Add 1/2 cup water.
Add 1/4 cup coconut milk for thickness.
Add 1 tbsp flax meal and 1 scoop protein powder of choice.
Reduce to simmer and let thicken.
Meanwhile, sauté banana in coconut oil and cinnamon.
Combine all in a bowl.
Add desired toppings.
