Sea Salted Chocolate Chip Cookie Bars

Ingredients

  • 1 flax egg
  • 1/4 cup almond butter
  • 2 tbsp coconut oil
  • 1 tbsp olive oil
  • 1/2 cup tigernut flour
  • 3 tbsp coconut sugar
  • 1/2 tbsp maple syrup
  • 2 tbsp extra dark chocolate chips
  • 2 tsp sea salt (divided)
  • 1 tsp baking powder

Preparation

  1. Preheat oven to 350 degrees

  2. Mix all wet then dry ingredients in a large bowl (using only 1 tsp sea salt, reserving the other tsp for the sprinkle)

  3. Spread dough in a 1/4 inch layer on a parchment paper lined baking sheet

  4. Sprinkle remaining sea salt over the top. Bake for 15 minutes

  5. Let cool for 5-10 minutes to finish cooking through

  6. Cut into bars & enjoy
