Crispy Sweet Potato Guac Toast
Ingredients
- 1 large sweet potato
- 1 tablespoon avocado oil
- Salt and pepper to taste
- 1 ripe avocado
- 1 cup cherry tomatoes
- 1/2 lime
- Fresh coriander
Preparation
Preheat your oven to 200°C.
Slice the sweet potato into 1/4-inch rounds, place on a baking tray, drizzle with oil, season with salt and pepper, and bake for 20-25 minutes, flipping halfway, until golden and tender.
While the sweet potato is roasting, make the guacamole by scooping the avocado into a bowl or food processor, adding cherry tomatoes, lime juice, salt, and pepper, and mashing or pulsing until smooth but still a little chunky.
Once the sweet potato rounds are done, let them cool slightly, then top generously with the guacamole.
