Cherry Bakewell Baked Oats Breakfast
Ingredients
- 2 cups rolled oats
- 1/4 cup flaked almonds
- 150 grams of frozen cherries, defrosted
- 3 tbsp syrup of choice
- 1 tsp vanilla extract
- 450 ml dairy free milk
- 2 tsp cinnamon
- Pinch of salt
Preparation
Make this the night before to have breakfast ready for 4-5 days.
Preheat the oven to 175 degrees Celsius.
Combine all ingredients in a bowl and pour the mixture into a dish.
Sprinkle some almonds on top.
Bake in the oven for about 40 minutes, checking that the almonds don’t burn; if they do, cover the pan with aluminium foil.
Let the tray cool down before serving.
For the cherry chia jam: Add 200 grams frozen cherries to a pan with a little bit of water.
Bring to a boil and add 1 tablespoon of syrup.
Lower the heat and cook for 4-5 minutes.
Turn off the heat and add 3 tbsp of chia seeds.
Mix really well and let the mixture cool down to thicken.
Serving ideas
To serve, add some plant-based yogurt.
Sprinkle some seeds on top.
Add a banana or any other fruit.
Include a scoop of nut butter.
Cacao nibs can also be added for extra flavor.
