Cherry Bakewell Baked Oats Breakfast

Ingredients

  • 2 cups rolled oats
  • 1/4 cup flaked almonds
  • 150 grams of frozen cherries, defrosted
  • 3 tbsp syrup of choice
  • 1 tsp vanilla extract
  • 450 ml dairy free milk
  • 2 tsp cinnamon
  • Pinch of salt

Preparation

  1. Make this the night before to have breakfast ready for 4-5 days.

  2. Preheat the oven to 175 degrees Celsius.

  3. Combine all ingredients in a bowl and pour the mixture into a dish.

  4. Sprinkle some almonds on top.

  5. Bake in the oven for about 40 minutes, checking that the almonds don’t burn; if they do, cover the pan with aluminium foil.

  6. Let the tray cool down before serving.

  7. For the cherry chia jam: Add 200 grams frozen cherries to a pan with a little bit of water.

  8. Bring to a boil and add 1 tablespoon of syrup.

  9. Lower the heat and cook for 4-5 minutes.

  10. Turn off the heat and add 3 tbsp of chia seeds.

  11. Mix really well and let the mixture cool down to thicken.

Serving ideas

  1. To serve, add some plant-based yogurt.

  2. Sprinkle some seeds on top.

  3. Add a banana or any other fruit.

  4. Include a scoop of nut butter.

  5. Cacao nibs can also be added for extra flavor.
