Chickpea and Soy Pancakes with Christmas Twist

- Soy flour 1/2 cup
- Apple puree
- Lebkuchen spices
- Plant-based milk

Preparation
Mix chickpea flour, soy flour, and lebkuchen spices together in a bowl
In a separate bowl, combine apple puree and plant-based milk to create a wet mixture
Combine the wet and dry mixtures to form a batter, adjusting consistency with more milk if needed
Heat a non-stick pan or griddle over medium heat and lightly grease it
Pour batter onto the pan to form pancakes and cook until bubbles form and edges set, then flip and cook until golden brown
Top the cooked pancakes with chestnuts and peanut butter before serving
