Easy Apple Pancake with Coconut and Vanilla

Ingredients

  • 1 tablespoon whole wheat flour, common flour, or buckwheat flour
  • 1 tablespoon rice flour
  • 1 tablespoon grated coconut
  • 1/3 cup water or milk
  • 1 small apple
  • vanilla essence

Preparation

  1. Beat all ingredients together.

  2. Cut the apple in half and then cut that half into wedges.

  3. In a small skillet, add a little coconut oil and arrange the apple wedges in a flower shape.

  4. Optionally sprinkle sugar or cinnamon on top.

  5. Wait for the apple wedges to brown slightly.

  6. Pour the pancake batter over the apples; depending on skillet size, it may or may not cover the apple arrangement completely - it doesn't need to be perfect.

  7. Cook each side on low heat for 3 minutes and flip carefully.

  8. Before removing from heat, add honey on top to melt it.

  9. Optionally add a mix of seeds and red fruits on top as a personal touch.
