Easy Apple Pancake with Coconut and Vanilla
Ingredients
- 1 tablespoon whole wheat flour, common flour, or buckwheat flour
- 1 tablespoon rice flour
- 1 tablespoon grated coconut
- 1/3 cup water or milk
- 1 small apple
- vanilla essence
Preparation
Beat all ingredients together.
Cut the apple in half and then cut that half into wedges.
In a small skillet, add a little coconut oil and arrange the apple wedges in a flower shape.
Optionally sprinkle sugar or cinnamon on top.
Wait for the apple wedges to brown slightly.
Pour the pancake batter over the apples; depending on skillet size, it may or may not cover the apple arrangement completely - it doesn't need to be perfect.
Cook each side on low heat for 3 minutes and flip carefully.
Before removing from heat, add honey on top to melt it.
Optionally add a mix of seeds and red fruits on top as a personal touch.
