Fall-Inspired Oatmeal Breakfast Bowl

Ingredients

  • 1/2 cup oats
  • 1.5 cups oat milk or water
  • 1 tablespoon chia seeds
  • 1/2 teaspoon cinnamon
  • 1 scoop vanilla protein powder or collagen powder
  • 1/2 chopped nectarine
  • blueberries
  • sliced bananas
  • peanut butter
  • additional cinnamon

Preparation

  1. In a small pot, add 1/2 cup oats and 1.5 cups oat milk or water. Stir and cook for 1-2 minutes.

  2. Add 1 tablespoon chia seeds and 1/2 teaspoon cinnamon, then cook for another minute.

  3. Turn off the heat and mix in 1 scoop of vanilla protein powder or collagen powder, such as unflavored collagen from Vital Proteins.

  4. Top the oatmeal with half a chopped nectarine, blueberries, sliced bananas, a big spoon of peanut butter, and more cinnamon.
