Fall-Inspired Oatmeal Breakfast Bowl
Ingredients
- 1/2 cup oats
- 1.5 cups oat milk or water
- 1 tablespoon chia seeds
- 1/2 teaspoon cinnamon
- 1 scoop vanilla protein powder or collagen powder
- 1/2 chopped nectarine
- blueberries
- sliced bananas
- peanut butter
- additional cinnamon
Preparation
In a small pot, add 1/2 cup oats and 1.5 cups oat milk or water. Stir and cook for 1-2 minutes.
Add 1 tablespoon chia seeds and 1/2 teaspoon cinnamon, then cook for another minute.
Turn off the heat and mix in 1 scoop of vanilla protein powder or collagen powder, such as unflavored collagen from Vital Proteins.
Top the oatmeal with half a chopped nectarine, blueberries, sliced bananas, a big spoon of peanut butter, and more cinnamon.
