Ingredients
- 2 large pancakes
- 2 tablespoons buckwheat flour
- 1 teaspoon baking powder
- 1 egg

Preparation
In a bowl, whisk together buckwheat flour, baking powder, egg, salt, and your choice of sweetener (sugar, stevia, or syrup) until the batter is smooth and free of lumps.
Heat a skillet over medium heat and melt a teaspoon of butter in it.
Using a spoon, ladle the batter onto the skillet to form two large pancakes. Cook for about 3 minutes on each side, waiting for bubbles to form before flipping them.
