Grilled Sausage Croque with Egg
Ingredients
- 3 vegetarian sausages
- 1 black pepper and sea salt bloomer bread
- Butter (for spreading)
- Heinz no added sugar tomato ketchup
- Pilgrims Choice extra mature cheddar cheese (grated)
- 2 cheese slices
- A little hot water
- 1 old Cotswold Legbar egg
- Hellmann's chilli and garlic sauce
- Sea salt
- Chives
- Chilli flakes
Preparation
Pan fry the sausages until cooked, then halve them.
Slice the bread and butter the outer sides.
Spread ketchup on the bread, add the halved sausages, and assemble the sandwich.
Cook the sandwich in a dry frying pan over medium heat until golden on both sides, flipping carefully by placing a plate underneath and inverting.
For the cheese sauce, tear the cheese slices, add a little hot water, stir, and microwave for a few seconds if needed to melt.
Top the cooked sandwich with the cheese sauce, sprinkle with the remaining grated cheddar, and place under the grill until the cheese is melted and bubbly.
Fry the egg in a pan until cooked to your liking.
Serve the sandwich with the fried egg, drizzled with chilli and garlic sauce, and seasoned with sea salt, chives, and chilli flakes.

The flipping method helps prevent the sandwich from falling apart during cooking.
