Mocha Toasted Nut Clusters

Ingredients

  • 2 cups macadamia nuts
  • 2 cups almonds
  • 1 cup flaked almonds
  • 1/2 cup rolled oats
  • 1/2 cup sunflower seeds
  • 1/2 cup raw millet or quinoa
  • 1/3 cup raw cacao
  • 150ml espresso cooled
  • 1 egg white or 2 Tbsp aquafaba
  • 3/4 cup maple syrup

Preparation

  1. Preheat oven to 140°C.

  2. Place oats, nuts, millet, sunflower seeds, and cocoa powder in a large bowl and mix to combine.

  3. Add cooled espresso, egg white or aquafaba, and maple syrup, and mix well until coated.

  4. Line two large baking trays with parchment paper and spread the mixture evenly.

  5. Bake for 20 minutes, then toss the mixture to ensure even baking.

  6. Bake for a further 25 minutes or until golden.

  7. Allow to cool before breaking into chunks and storing in an airtight container.

Notes

  1. This recipe makes about 7 cups.
