Sunday Morning Yogurt Pancakes
Ingredients
- 1 cup flour
- 2 tbsp Truvia or other sugar alternative
- 1 tsp baking powder
- 1/4 teaspoon baking soda
- 1 cup Greek yogurt
- 2 eggs
- 2 tbsp butter, melted
Preparation
Add all ingredients into a large bowl and whisk together into a smooth batter.
Heat a non-stick frying pan on medium to low heat and drizzle with a little olive oil.
Drop heaped tablespoons of batter into the pan and cook for a minute until bubbles begin to form, then flip the pancakes over to cook the other side for another minute.
Remove from pan and cool on a rack. Serve with extra yogurt and maple syrup.
