Sunday Morning Yogurt Pancakes

Ingredients

  • 1 cup flour
  • 2 tbsp Truvia or other sugar alternative
  • 1 tsp baking powder
  • 1/4 teaspoon baking soda
  • 1 cup Greek yogurt
  • 2 eggs
  • 2 tbsp butter, melted

Preparation

  1. Add all ingredients into a large bowl and whisk together into a smooth batter.

  2. Heat a non-stick frying pan on medium to low heat and drizzle with a little olive oil.

  3. Drop heaped tablespoons of batter into the pan and cook for a minute until bubbles begin to form, then flip the pancakes over to cook the other side for another minute.

  4. Remove from pan and cool on a rack. Serve with extra yogurt and maple syrup.
