Tofu Scramble Burrito - Easy, Fast, Nutritious, and Delicious Breakfast
Ingredients
- 1 Tbsp vegan butter
- 1/2 a block extra firm tofu, crumbled
- Yellow pepper, chopped
- 3 Tbsp lentils
- 2 cherry tomatoes, chopped
- 15 spinach leaves, julienned
- 1/4 tsp turmeric
- 1/8 tsp garlic powder
- 3 twists of black pepper grinder
- Pinch of salt
- Pinch of cayenne pepper
- Flour tortilla
- Vegan Colby Jack cheese
Preparation
Melt vegan butter in a pan.
Add turmeric, garlic powder, black pepper, salt, and cayenne pepper to the melted butter.
Drop crumbled tofu into the pan and stir to blend in the seasoning.
Add yellow pepper, tomatoes, lentils, and spinach to one side of the pan until slightly softened, then combine.
Warm the flour tortilla.
Top the tortilla with vegan Colby Jack cheese.
Add the tofu scramble on top of the cheese (this will assist in melting the cheese).
Fold in the sides of the tortilla and roll it up.
