Apple and Summer Berries Crumble

Ingredients

Filling

  • 4 eating apples
  • 1 pack of frozen summer berries
  • 100g golden caster sugar

Topping

  • 150g plain flour
  • 60g golden caster sugar
  • 40g light brown sugar
  • 100g vegan butter
  • 50g Jumbo oats
  • 1/2 teaspoon vanilla bean paste
  • 1/2 teaspoon cinnamon

Preparation

  1. Preheat the oven to 200°C/Fan 180°C/Gas 6. Put all the apples and berries in an ovenproof dish, add the sugar and mix well.

  2. To make the topping, mix the flour and caster sugar in a bowl, then add the butter and rub it into the dry ingredients with your fingertips. The mixture should have the texture of coarse breadcrumbs. Add the oats.

  3. Sprinkle the topping over the apples and berries and bake the crumble in the preheated oven for about 30 minutes or until the top is golden brown and the apples are cooked.

  4. Serve with vegan cream, vegan vanilla ice cream or custard.
