Avocado Toast with Poached Egg Breakfast

Ingredients

  • sourdough bread
  • avocado
  • tomatoes
  • egg
  • mixed greens
  • extra virgin olive oil
  • red wine vinegar
  • bacon
  • black coffee
  • salt
  • pepper
  • chili flakes
  • scallions

Preparation

  1. Toast the sourdough bread until golden.

  2. Add the egg to a pot of boiling water with a drizzle of vinegar and boil for 2.5 minutes.

  3. Season the poached egg with salt, pepper, chili flakes, and scallions.

  4. Toss mixed greens with extra virgin olive oil and red wine vinegar.

  5. Cook bacon until crisp.

  6. Brew black coffee.

  7. Spread avocado and tomatoes on the toasted bread and top with the poached egg.

  8. Serve with the mixed greens salad and bacon.
