Easy Vegan French Toast Breakfast

Ingredients

  • 8 thick slices of stale bread
  • 1 ripe banana
  • 1 cup oat or soy milk
  • 1 tbsp maple syrup
  • 2 tbsp ground flax seeds
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/2 tsp kala namak salt
  • 1-2 tbsp vegan butter

Toppings

  • Dark cherries
  • Maple syrup
  • Powdered sugar

Preparation

  1. Blend banana, oat milk, flax seeds, maple syrup, black salt, cinnamon, and vanilla until smooth. Pour mixture into a shallow bowl and let it sit for 5-10 minutes.

  2. Soak bread slices in the mixture and then fry them with vegan butter on low to medium heat for about 3 minutes per side until golden brown.

Tips

  1. Kala namak salt adds an eggy flavor; omit and use a pinch of sea salt if unavailable.

  2. Substitute ground flax seeds with white chia seeds for similar results.
