Easy Vegan French Toast Breakfast
Ingredients
- 8 thick slices of stale bread
- 1 ripe banana
- 1 cup oat or soy milk
- 1 tbsp maple syrup
- 2 tbsp ground flax seeds
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/2 tsp kala namak salt
- 1-2 tbsp vegan butter
Toppings
- Dark cherries
- Maple syrup
- Powdered sugar
Preparation
Blend banana, oat milk, flax seeds, maple syrup, black salt, cinnamon, and vanilla until smooth. Pour mixture into a shallow bowl and let it sit for 5-10 minutes.
Soak bread slices in the mixture and then fry them with vegan butter on low to medium heat for about 3 minutes per side until golden brown.
Tips
Kala namak salt adds an eggy flavor; omit and use a pinch of sea salt if unavailable.
Substitute ground flax seeds with white chia seeds for similar results.
