Frittata with Vegetables and Mozzarella
Ingredients
- 8 eggs
- 1 tablespoon olive oil
- 150 g mushrooms
- 1 small onion
- 1 bell pepper
- 150 ml heavy cream
- 130 g mozzarella
- chopped parsley
- salt
- pepper
- a little sweet paprika
Preparation
In a pan, sauté the onion, mushrooms, and bell pepper in olive oil for 5-7 minutes until lightly browned. Let the vegetables cool.
Beat the eggs with the cream, salt, pepper, sweet paprika, and half of the grated mozzarella.
Place the vegetables in a baking dish, pour the egg mixture, sprinkle the parsley and the remaining mozzarella.
Bake for 30-35 minutes at 180°C until it puffs up nicely and browns on the edges.
Serving suggestions
Serve directly from the pan with a simple salad. It can also be reheated or taken to go.
