Frittata with Vegetables and Mozzarella

Ingredients

  • 8 eggs
  • 1 tablespoon olive oil
  • 150 g mushrooms
  • 1 small onion
  • 1 bell pepper
  • 150 ml heavy cream
  • 130 g mozzarella
  • chopped parsley
  • salt
  • pepper
  • a little sweet paprika

Preparation

  1. In a pan, sauté the onion, mushrooms, and bell pepper in olive oil for 5-7 minutes until lightly browned. Let the vegetables cool.

  2. Beat the eggs with the cream, salt, pepper, sweet paprika, and half of the grated mozzarella.

  3. Place the vegetables in a baking dish, pour the egg mixture, sprinkle the parsley and the remaining mozzarella.

  4. Bake for 30-35 minutes at 180°C until it puffs up nicely and browns on the edges.

Serving suggestions

  1. Serve directly from the pan with a simple salad. It can also be reheated or taken to go.
