Quick and Easy Buddha Bowl

Ingredients

  • Sweet potatoes
  • Zucchini
  • Radish
  • Firm tofu, 150g
  • Sweet soy sauce, 1 tbsp
  • Tahini, 1 tbsp
  • Maple syrup, 1 tsp
  • Juice of 1/2 green lemon
  • 1 garlic clove

Preparation

  1. Roast the sweet potatoes in the oven until tender

  2. Slice the zucchini and radish for raw use

  3. Dice the firm tofu into cubes if not already done.

  4. Slice the garlic clove.

  5. In a large bowl, mix the diced tofu, sweet soy sauce, tahini, maple syrup, juice of 1/2 green lemon, and sliced garlic.

  6. Let the tofu mixture marinate for at least 30 minutes or overnight.

  7. Grill the marinated tofu with the marinade.

  8. Assemble the Buddha bowl by combining the raw sliced zucchini, radish, roasted sweet potatoes, and grilled tofu in a bowl
