Kale Salad with Peanut Butter Dressing

Ingredients

  • 200g kale
  • 1 tablespoon smooth peanut butter
  • 1/2 tablespoon honey
  • 1/2 teaspoon chilli flakes
  • 1/2 tablespoon toasted sesame oil
  • 1/2 tablespoon soy sauce
  • 1/2 tsp furikake seasoning or sesame seeds
  • A few toasted peanuts to serve

Optional additions

  • blanched broccoli
  • edamame beans

Preparation

  1. Wash the kale and remove any thick stalks.

  2. Lightly cook the kale by pouring boiling water over it in a colander or blanching it in boiling water for 30 seconds.

  3. Drain the kale and rinse it with cold water.

  4. Drain well and pat dry with a clean tea towel if necessary.

  5. Make the dressing by combining peanut butter, honey, chilli flakes, sesame oil, and soy sauce in a large bowl and whisk until well combined.

  6. Add the kale to the dressing and mix thoroughly.

  7. Top with furikake seasoning or sesame seeds and toasted peanuts, then serve.

Tips

  1. The dressing can also be used on noodles or other vegetables like broccoli.

  2. Add optional vegetables such as blanched broccoli and edamame beans, and increase the dressing quantity accordingly.
