Anne's Raisin Walnut Cookies

Ingredients

  • 2 eggs
  • 1 cup vegetable oil
  • 1 cup yogurt
  • 1.5 cups sugar
  • 1/2 cup ground walnuts
  • 1 packet vanilla
  • 1 packet baking powder
  • 1/2 teaspoon baking soda
  • Zest of 1 lemon
  • 1 cup raisins
  • 5-6 cups flour

Topping

  • Egg yolk
  • Ground walnuts
  • Sugar

Preparation

  1. Mix all ingredients except flour, baking powder, vanilla, and baking soda in a mixing bowl with a spoon.

  2. Add the remaining ingredients and knead until the dough is non-sticky. Flour amount may vary; do not add too much to avoid hardening the dough.

  3. Shape the dough into balls the size of mandarins.

  4. Brush with egg yolk, dip in ground walnuts, place on a parchment-lined baking sheet, and sprinkle with sugar.

  5. Bake at 180°C for 30 minutes until golden brown. Do not overbake.

  2. The cookies taste best when served warm.
