Anne's Raisin Walnut Cookies
Ingredients
- 2 eggs
- 1 cup vegetable oil
- 1 cup yogurt
- 1.5 cups sugar
- 1/2 cup ground walnuts
- 1 packet vanilla
- 1 packet baking powder
- 1/2 teaspoon baking soda
- Zest of 1 lemon
- 1 cup raisins
- 5-6 cups flour
Topping
- Egg yolk
- Ground walnuts
- Sugar
Preparation
Mix all ingredients except flour, baking powder, vanilla, and baking soda in a mixing bowl with a spoon.
Add the remaining ingredients and knead until the dough is non-sticky. Flour amount may vary; do not add too much to avoid hardening the dough.
Shape the dough into balls the size of mandarins.
Brush with egg yolk, dip in ground walnuts, place on a parchment-lined baking sheet, and sprinkle with sugar.
Bake at 180°C for 30 minutes until golden brown. Do not overbake.

The cookies taste best when served warm.
