Chocolate Peanut Butter Cookies

Ingredients

  • 1/3 cup buckwheat flour
  • 1/3 cup rice flour
  • 1/4 cup chocolate superfood powder
  • 3/4 cup smooth peanut butter
  • 1/3 cup maple syrup
  • 1/4 cup coconut sugar
  • 2 tsp vanilla extract
  • Pinch salt

Preparation

  1. Preheat the oven to 180°C and line a baking tray with parchment paper.

  2. Place all the cookie ingredients in a food processor and process until the mixture begins to come together. Press a little bit of the mixture together with your fingers to check if it is the right texture to roll into a ball.

  3. Scoop out heaped tablespoons of the dough and roll into a ball with your hands. Flatten slightly between your palms and place on the prepared baking tray. There won’t be much spread, so place them a few centimeters apart. Use a fork to press down each cookie ball to flatten it and form a criss-cross pattern.

  4. Bake for approximately 10 minutes until the cookies become nice and golden. Remove from oven and cool on the tray for 5 minutes before placing them on a wire rack to cool completely.

Tips

  1. Baking with peanut butter is tricky as texture can vary by brand; the dough should be soft and pliable, not sticky, oily, or dry. Adjust by adding flour or chocolate powder if too sticky or oily, or maple syrup or peanut butter if too dry.

  2. Store in an airtight container.
