Homemade Coconut Milk Donuts

Ingredients

  • 500 grams all-purpose flour
  • 3 grams baking powder
  • 60 grams powdered sugar
  • A pinch of salt
  • 1 egg
  • 50 grams margarine or butter
  • 11 grams instant yeast
  • 1/2 cup canned coconut milk
  • 1/2 cup warm water
  • Cooking oil
  • 4 tablespoons shortening

Preparation

  1. In a mixer, combine all dry ingredients and mix until well blended, then add egg, coconut milk, and water and mix again until smooth

  2. Add margarine and salt, and mix until the dough becomes elastic

  3. Weigh out 40 grams of dough and shape it into donuts as desired, ensuring fingers and tray are lightly floured

  4. Cover with a damp cloth and let rest for 40 minutes or until doubled in size, then dip a finger in flour and press into the center of each donut, and let rest uncovered for another 10 minutes

  5. Heat oil and add 4 tablespoons of shortening to it, then fry in moderately hot oil over medium heat until golden brown, flipping only once to maintain the ring shape

  6. Remove from oil and drain
