Mini Baked Cheesecake with Oreo Crust
Ingredients
Base
- 300g Oreo cookies or Marie biscuits
- 130g melted margarine
Cheesecake mixture
- 500g cream cheese
- 100g caster sugar
- 210g fresh yogurt (original flavor)
- 20g cornstarch
- 2 eggs
- 1 tsp vanilla essence
Preparation
Crush the biscuits and mix with melted margarine to form the base mixture.
Press the base mixture firmly into cupcake liners.
Mix the cream cheese and caster sugar until smooth.
Add the fresh yogurt and mix well.
Add the cornstarch and stir to combine.
Add the eggs and vanilla essence last, mixing until just combined.
Pour the cheesecake mixture into the prepared crusts.
Bake at 150°C for 30-35 minutes with a wet towel in the baking tray.
Tips
Optionally add fruits or fillings on top for patterns before baking.
Use stretchable or ridged cupcake liners for easy removal.
