Quick and Easy Breakfast Cookies

Ingredients

  • 1 ripe banana, mashed
  • 6 tablespoons peanut butter
  • 1 teaspoon vanilla extract
  • 3-4 tablespoons maple syrup (to taste)
  • 1 1/2 cups oats
  • 1/4 cup ground almonds
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • Pinch sea salt
  • 2 tablespoons pumpkin or sunflower seeds
  • 4 tablespoons raisins or chopped dates
  • 2 tablespoons dried cranberries
  • 1 tablespoon chia seeds
  • 1/2 cup dark chocolate chips

Preparation

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.

  2. In a bowl, mash the ripe banana until smooth.

  3. Add peanut butter, vanilla extract, and maple syrup to the mashed banana and mix well.

  4. In a separate bowl, combine oats, ground almonds, cinnamon, baking powder, sea salt, pumpkin or sunflower seeds, raisins or chopped dates, dried cranberries, chia seeds, and dark chocolate chips.

  5. Stir the dry ingredients into the wet mixture until fully combined.

  6. Scoop the dough onto the prepared baking sheet and shape into cookies.

  7. Bake for 12-15 minutes or until golden and set.

  8. Allow to cool on the baking sheet before serving.
