Sandwich Barfi with Dry Fruits Layers
Ingredients
- 1/4 cup almonds
- 1/4 cup pistachios
- 1/4 cup walnuts
- 2 tablespoons dry coconut (optional)
- 4-5 cardamom powder
- few saffron threads
- 1 tablespoon lukewarm milk
- approximately 8-10 dates, pitted and chopped
- 1/4 cup melted ghee
- 1/2 cup lukewarm milk
- approximately 2 cups + 2 tablespoons milk powder
- 1/2 cup powdered sugar
Garnish
- gold leaf
- almonds
- saffron threads
Preparation
In a mixer jar, add 1/4 cup almonds, 1/4 cup pistachios, and 1/4 cup walnuts.
Add 2 tablespoons dry coconut if using.
Add 4-5 cardamom powder.
Grind to a fine powder and transfer to a bowl.
In the same mixer jar, add approximately 8-10 pitted and chopped dates.
Add few saffron threads soaked in 1 tablespoon lukewarm milk.
Mix this paste with the nuts mixture and set aside.
In a pan, add 1/4 cup melted ghee.
Pour in 1/2 cup lukewarm milk.
Add approximately 2 cups + 2 tablespoons milk powder.
Add 1/2 cup powdered sugar.
Mix well to make a smooth mixture.
Heat the pan and stir the mixture on medium heat until it becomes one mass.
Turn off the heat and continue stirring for 5 minutes.
Grease a tray and spread half of the milk mixture evenly to form a thick layer.
Add a layer of the dry fruits mixture on top.
Cover with the remaining milk mixture.
Brush some ghee on top and let it set for half an hour.
Cut into pieces and garnish with gold leaf, almonds, and saffron.
