Best Vegan Spelt Flour Pancakes
Ingredients
- 300g spelt flour
- 150ml vegetable milk
- 15g baking powder
- 180g vegetable yoghurt
- 4 tbsp raw sugar
- juice of one lemon
- pinch of salt
Preparation
In a large bowl, whisk together the spelt flour, baking powder, raw sugar, and salt.
In another bowl, mix the vegetable milk, vegetable yoghurt, and lemon juice until well combined.
Gradually add the wet ingredients to the dry ingredients and stir until just mixed, avoiding overmixing to keep the batter light.
Heat a non-stick skillet or griddle over medium heat and lightly grease if necessary.
Pour portions of batter onto the hot surface to form pancakes.
Cook until bubbles appear on the surface and the edges look set, then flip and cook the other side until golden brown.
Remove from heat and serve warm.
