Apple Pie Baked Oats
Ingredients
- 1/2 cup oats
- 1/4 tsp baking powder
- 2 tbsp maple syrup
- 1/4 cup applesauce
- 1/4 tsp vanilla
- 1/2 tsp cinnamon
- 1/8 tsp nutmeg
- dash of salt
- 1/2 cup dairy-free milk
- 1/2 cup grated apple
- 2.5 tbsp chopped pecans
Topping
- 1/2 apple
- 1 tbsp chopped pecans
- 1 tsp coconut oil
- 1 tsp maple syrup
- dash of vanilla
- dash of cinnamon
Preparation
Add the oats, baking powder, maple syrup, applesauce, vanilla, cinnamon, nutmeg, salt, and milk to a blender and blend all of the ingredients.
Grate an apple and measure out 1/2 cup, then fold it into the blended oats along with the chopped pecans, but do not blend them.
Transfer the batter to an oven-safe ramekin and bake for about 30 minutes at 400°F/200°C, adjusting time for desired texture.
While the oats are baking, chop 1/2 apple into small cubes and add it to a pan over medium heat with the chopped pecans, coconut oil, maple syrup, vanilla, and cinnamon.
Cook the apple and pecans for 5-7 minutes, stirring to prevent sticking.
Once the oats are ready, top them with the caramelized apple topping and serve.
