Apple Pie Baked Oats

Ingredients

  • 1/2 cup oats
  • 1/4 tsp baking powder
  • 2 tbsp maple syrup
  • 1/4 cup applesauce
  • 1/4 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • dash of salt
  • 1/2 cup dairy-free milk
  • 1/2 cup grated apple
  • 2.5 tbsp chopped pecans

Topping

  • 1/2 apple
  • 1 tbsp chopped pecans
  • 1 tsp coconut oil
  • 1 tsp maple syrup
  • dash of vanilla
  • dash of cinnamon

Preparation

  1. Add the oats, baking powder, maple syrup, applesauce, vanilla, cinnamon, nutmeg, salt, and milk to a blender and blend all of the ingredients.

  2. Grate an apple and measure out 1/2 cup, then fold it into the blended oats along with the chopped pecans, but do not blend them.

  3. Transfer the batter to an oven-safe ramekin and bake for about 30 minutes at 400°F/200°C, adjusting time for desired texture.

  4. While the oats are baking, chop 1/2 apple into small cubes and add it to a pan over medium heat with the chopped pecans, coconut oil, maple syrup, vanilla, and cinnamon.

  5. Cook the apple and pecans for 5-7 minutes, stirring to prevent sticking.

  6. Once the oats are ready, top them with the caramelized apple topping and serve.
