Baked Banana Oats Breakfast

Ingredients

  • 3 ripe mashed bananas
  • 140g grated carrot
  • 30g chopped walnuts
  • 40g vegan chocolate chips (optional)
  • 240g rolled oats
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 2 tablespoons agave syrup or maple syrup
  • 1.5 cups dairy-free milk (350ml)

Preparation

  1. Preheat the oven to 180°C and line a 20cm square baking tin with baking paper or grease with coconut oil.

  2. Blitz the rolled oats in a blender until they have an oat flour consistency.

  3. In a large bowl, mash the bananas and add all the other ingredients, then mix well.

  4. Pour the mixture into the prepared baking tin and bake for 50 minutes or until the top is golden.

  5. Remove from the oven, let cool for 10 minutes, and cut into 4-6 portions.

  6. Serve immediately or cool completely and store in the fridge for up to 5 days. Reheat individual portions in the microwave for about 30 seconds.

Serving suggestions

  1. Top with Greek-style yogurt, extra bananas, blueberries, chia seeds, and a drizzle of maple syrup.
