Grilled Salmon with Spicy Roasted Cauliflower and Vegetables
Ingredients
- 1 piece of salmon
- freshjax mesquite lime seasoning
- 1/2 sweet potato
- 1/2 avocado
- red pepper flakes
- 1 head of cauliflower
- 2 tablespoons avocado oil
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon pink Himalayan salt
- 1 teaspoon garlic
- zucchini
- fresh tomato
Preparation
Grill the salmon in a cast iron skillet with avocado oil and mesquite lime seasoning for 3 minutes on each side.
Bake the sweet potato at 400°F for 45 minutes, then turn off the oven and leave it in for another 45 minutes.
Roast the cauliflower: Preheat oven to 400°F, toss with 2 tablespoons avocado oil, 1 teaspoon each of paprika, cumin, pink Himalayan salt, and garlic, and cook for about 35 minutes.
Cook zucchini chips in a skillet at 400°F for 7-8 minutes.
Serve with 1/2 avocado, red pepper flakes, and fresh tomato.
