Grilled Salmon with Spicy Roasted Cauliflower and Vegetables

Ingredients

  • 1 piece of salmon
  • freshjax mesquite lime seasoning
  • 1/2 sweet potato
  • 1/2 avocado
  • red pepper flakes
  • 1 head of cauliflower
  • 2 tablespoons avocado oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon pink Himalayan salt
  • 1 teaspoon garlic
  • zucchini
  • fresh tomato

Preparation

  1. Grill the salmon in a cast iron skillet with avocado oil and mesquite lime seasoning for 3 minutes on each side.

  2. Bake the sweet potato at 400°F for 45 minutes, then turn off the oven and leave it in for another 45 minutes.

  3. Roast the cauliflower: Preheat oven to 400°F, toss with 2 tablespoons avocado oil, 1 teaspoon each of paprika, cumin, pink Himalayan salt, and garlic, and cook for about 35 minutes.

  4. Cook zucchini chips in a skillet at 400°F for 7-8 minutes.

  5. Serve with 1/2 avocado, red pepper flakes, and fresh tomato.
