Turkey Stuffed Bell Peppers with Vegetables
Ingredients
- 2 bell peppers
- 1 lb ground turkey
- 1/2 sweet potato
- 1/2 onion
- 1/2 zucchini
- 2 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili powder
- 1 tsp garlic powder
- sprinkle of salt
- avocado oil
- red pepper flakes
- avocado
- jalapeños
Preparation
Cut 2 bell peppers in half and scoop out the middle.
Cook 1 lb ground turkey, 1/2 sweet potato, 1/2 onion, and 1/2 zucchini in a medium skillet with a seasoning blend of 2 tsp cumin, 1 tsp paprika, 1/2 tsp chili powder, 1 tsp garlic powder, and a sprinkle of salt, using avocado oil over medium heat for about 10 minutes.
Stuff the cooked mixture into the pepper halves.
Bake at 400°F for 15 minutes.
Top with red pepper flakes, avocado, and jalapeños.
