Turkey Stuffed Bell Peppers with Vegetables

Ingredients

  • 2 bell peppers
  • 1 lb ground turkey
  • 1/2 sweet potato
  • 1/2 onion
  • 1/2 zucchini
  • 2 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 1 tsp garlic powder
  • sprinkle of salt
  • avocado oil
  • red pepper flakes
  • avocado
  • jalapeños

Preparation

  1. Cut 2 bell peppers in half and scoop out the middle.

  2. Cook 1 lb ground turkey, 1/2 sweet potato, 1/2 onion, and 1/2 zucchini in a medium skillet with a seasoning blend of 2 tsp cumin, 1 tsp paprika, 1/2 tsp chili powder, 1 tsp garlic powder, and a sprinkle of salt, using avocado oil over medium heat for about 10 minutes.

  3. Stuff the cooked mixture into the pepper halves.

  4. Bake at 400°F for 15 minutes.

  5. Top with red pepper flakes, avocado, and jalapeños.
