Nutritious Spinach Eggplant Tomato Potato Dish
Ingredients

- cumin
- mustard seeds
- green chilies
- curry leaves

Preparation
Boil spinach and purée it, then set aside.
In a pan, add oil; once warm, add cumin, mustard seeds, green chilies, and curry leaves.
Add chopped tomato and sauté it.
Add chopped eggplant and potato, sauté, cover with a lid, and slow cook until vegetables are well cooked.
Add the spinach purée and salt, then cook well for a few minutes.
Serve the curry with rice or roti.
