Nutritious Spinach Eggplant Tomato Potato Dish

Ingredients

  • spinach
  • eggplant
  • tomato
  • potato
  • oil
  • cumin
  • mustard seeds
  • green chilies
  • curry leaves

Preparation

  1. Boil spinach and purée it, then set aside.

  2. In a pan, add oil; once warm, add cumin, mustard seeds, green chilies, and curry leaves.

  3. Add chopped tomato and sauté it.

  4. Add chopped eggplant and potato, sauté, cover with a lid, and slow cook until vegetables are well cooked.

  5. Add the spinach purée and salt, then cook well for a few minutes.

  6. Serve the curry with rice or roti.
