Pink Pitaya Chia Parfait Dessert
Ingredients
Pudding
- 3 tbsp chia seeds
- 2 tbsp maple syrup or agave syrup
- 2 tsp unicorn superfoods pink pitaya powder
- 1 tsp vanilla extract
- 160 ml plant-based milk
Parfait components
- coconut yogurt
- puffed quinoa
- fresh kiwi
Preparation
Add all pudding ingredients to a jar, mix well and let it sit in the fridge overnight or for a few hours until set
In serving glasses, layer the set chia pudding with coconut yogurt
Top with puffed quinoa and fresh kiwi slices
Serve immediately and enjoy
