Pink Pitaya Chia Parfait Dessert

Ingredients

Pudding

  • 3 tbsp chia seeds
  • 2 tbsp maple syrup or agave syrup
  • 2 tsp unicorn superfoods pink pitaya powder
  • 1 tsp vanilla extract
  • 160 ml plant-based milk

Parfait components

  • coconut yogurt
  • puffed quinoa
  • fresh kiwi

Preparation

  1. Add all pudding ingredients to a jar, mix well and let it sit in the fridge overnight or for a few hours until set

  2. In serving glasses, layer the set chia pudding with coconut yogurt

  3. Top with puffed quinoa and fresh kiwi slices

  4. Serve immediately and enjoy
